Whether you want to make raspberry lemonade cupcakes, lemonade cupcakes with raspberry frosting, or raspberry cupcakes with lemon frosting, making cupcakes is a pretty easy job as long as you know what the needed ingredients are and how you should cook them.
Many of those who lacked a certain level of experience in baking told me that making a batch of cupcakes is hard. They told me that precision is everything when it comes to making a good cupcake, and only talented bakers can make a perfect cupcake. While I do believe that baking almost every type of cakes in this world is hard without a prior baking knowledge, I also believe that you do not have to be the most talented baker in the world to create a good cupcake. You do not need to have a baking skill like those bakers got in Cupcake Allie to make a cupcake that you and your loved ones can enjoy.
For those of you who are afraid of baking a cupcake, I want to show you a simple recipe that you beginners can try. This cupcake is a cupcake that will spoil your taste palate with its lemony and tangy taste. Introducing to you novice bakers the raspberry lemonade cupcake recipe.
What you will need for this raspberry lemon cupcake recipe
To be able to bring this raspberry lemon cupcakes recipe to life, you will need several easy to get ingredients. Prepare yourself because this is going to be a list that is not that short.
First, the flour department is covered by three-quarter cups of all-purpose flour and three-quarter cups of cake flour. Any brands of cake flour and all-purpose flour will do, so do not make it hard on yourself by looking for rare brands.
Next, you will need a teaspoon of baking powder and a 1/8 teaspoon of baking soda. These two things will help your dough rise when the time for it to comes. Nobody likes a flat cupcake after all, so these two things are pretty much essential in the making of this cupcake.
For the taste, you will need half a teaspoon of vanilla extract, half a teaspoon of lemon extract, a teaspoon and a half of lemon juice, all fresh from the grinder. Make sure that you got the measurement right with this one here because, without the correct measurement, the taste will be unbalanced.
The rest of the ingredients are a quarter teaspoon of salt, three-quarter cups of granulated sugar, a tablespoon of lemon zest, half a cup of unsalted butter, a large egg, and 2 large egg whites.
That is all of the ingredients you will need if you want to make only the cake. Because a cupcake without a frosting is like a boot without a sole, you will want to make a list of the frosting ingredients as well.
The frosting calls for one cup of raspberry, half a cup of unsalted butter, a quarter cup of salted butter, 3 cups of powdered sugar, half a teaspoon of vanilla extract, 25 fresh raspberries, and lemon wedges (this one is optional. It adds to the taste and the look factor though).
Bringing the raspberry lemonade cupcake recipe to life
What you need to do is to preheat the oven up to 350 degrees. Mix the flours in together with baking powder, baking soda, and the salt. When that is done, whisking it for 20 seconds or so will help it settle down. When you are done whisking it, leave the thing be for a minute and head to your food processor. Mix the sugar and the lemon zest, and blend until it is blended nicely. Add the egg, the egg whites, the vanilla, and the lemon extract in there. Leave it be when it is done and find yourself a measuring cup. In the measuring cup, pour in your buttermilk and lemon juice, whisking them both together. When they are whisked, this is where things get interesting.
The process is like building a house. You will need to add a third of the flour mixture in the cupcake cups, followed with half of the buttermilk mix, and mix them both in. When the mixing is done, bake the cupcakes for 20 minutes and you will have the cake on your cupcake.
For the frosting, all you need to do is puree the raspberry, heat the pureed thing, and cool it down in the freezer. Find a mixer and mix the butter until it is fluffy. When it is fluffy, add the powdered sugar, mix, and add the puree and the vanilla. Mix once more, and it will be ready for the cake.
I know there are lots of other raspberry lemon cupcakes recipes out there in the world, but I do believe mine is the simplest and the easiest of them all. Serve your raspberry lemonade cupcakes to your loved ones and cherish the sweetness of life with cupcakes in hand.
